tasty appetizer that is sure to impress you and your Valentine. And for the second course, we have two soups to choose from: an exotic chilled strawberry soup or a rich broccoli cheese soup.

Pasta Con Amore

| Ingredients: |
| 12 ounces ziti or penne |
| 2 bunches scallions chopped |
| 1 small red bell pepper seeded and chopped |
| 1 very large ripe tomato, chopped |
| ½ cup Colavita extra virgin olive oil |
| 2 tablespoons drained capers |
| 2 tablespoons chopped fresh basil (or 1 tablespoon dried basil) |
| 2 cups (approximately) ricotta cheese (low fat or no fat) |
| Freshly ground black pepper to taste Salt to taste 4 ounces mozzarella cheese, shredded (low fat or no fat) |

| Directions: |
| Put the chocolate into a heat-proof bowl over a pan of simmering water. Do not allow the water to touch the base of the bowl, or the chocolate may become too hot. Or you can put the chocolate in a microwave-proof container and heat it on Medium for 3 minutes. Stir the melted chocolate until it is smooth and glossy.Mix all the other ingredients together, pour on the chocolate and mix well.Using two teaspoons, spoon the mixture into paper cases and leave to set. Store in an airtight tin. Makes about 24 clusters. |
